Broccoli Cauliflower Salad

1 bunch raw broccoli
2 c. cauliflower florets
1 c. sunflower seeds
1 lb. bacon, cooked to a crisp
1 sm. red onion
1 c. Miracle Whip Lite (or Free) salad dressing
1/4 c. Splenda
2 tbsp. vinegar
1 c. raisins (Optional, I omit as hubby won't eat them)

Wash broccoli and trim off heavy stalks. Use the tender florets for this salad. Wash cauliflower, trim, and use florets for salad. Coarsely chop red onion. Combine in large bowl.

Stir together Miracle Whip salad dressing, Splenda, and vinegar together until creamy; add 1/2 of dressing mix to the vegetables. Stir well; refrigerate over night.

Just before serving, add chopped bacon, sunflower seeds, raisins if desired, and remaining salad dressing.

Yum, I have everything but the bacon. AND it just so happens I was wanting a snack. I think I will try this recipe asap. Tnx for posting it! <3 I bet if I use less dressing it will be ok without sitting overnight.

Christine, it's actually kinda dry at first... you only add half the dressing the night before just enough to wet the veggies... I guess to let it penetrate into the veggies. In the morning, or just before serving, you would add the rest of the ingredients and remaining dressing so it's not dry.

My SIL makes something like this with just the broccoli, I bet the cauliflower is a nummy addition! I'm gonna have to try this!

I'm not exactly sure where my grandma got this recipe, but she too used just the broccoli. Somehow over the years, I added the cauliflower to it and we really like it that way. The grocery store I used to work at served it in the deli with just the broccoli too...so that may be where Grandma came up with the recipe... I've also seen recipes where they add cherry tomatoes to it too...but I've not tried that.
